Ingredients to Almond Milk:
- 1 Cup Whole Raw Almonds (not roasted or toasted)
- 3-4 cups Water
- Enough water to cover the almonds
- Honey to taste
- Pinch of Salt
Soak the almonds overnight in enough water to cover the almonds.
Drain and discard water
Put Almonds into a Blender with 3-4 cups water and blend on high speed until smooth.
Strain through a linen cloth (not terry) and squeeze out excess milk. (I use an old tee-shirt)
Taste the milk, and add honey to tasteYou may also add chocolate syrups, or anything you prefer for flavor.
Store the milk in the fridge. Separation is normal: Shake before each use.
DON’T THROW AWAY THE MEAL (Left over, crushed up almonds)
Bake the Almond Meal at 350*F until dried and starting to turn golden brown (about 15 minutes). Once cooled put in a zip lock bag into the freezer and use in breaded foods, gluten free recipes and as toppings for many things. I use mine as a breading for chicken nuggets.Almond meal is usually $7-10 for just ½ pound.
You can also put the baked meal into a blender and make almond flour.
*You can also make larger batches at a time to suit your family’s needs. I make 1 Gallon of milk at a time.
**I have also made the milk with out soaking the almonds first and it still turns out lovely.
*** 3 ½ Cups Shelled Almonds = 1 lb.
